Chicken-Chestnut Casserole
Chicken-Chestnut Casserole is an moderately easy dinner. Made with 1 c. celery, chopped, 1 large onion, 2 c. cooked rice, 1 (3 lb.) chicken, cooked, boned and diced and 1 c. cream of chicken soup, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute celery and onion with 1/2 of butter until onion is clear.
Mix the chicken, rice, soup, water chestnuts and mayonnaise.
Melt rest of butter; mix with corn flakes.
Sprinkle over top.
Bake at 375Β° for 45 minutes, or until hot and fluffy. Serves 8 to 10.
