Chicken Chalupas
Chicken Chalupas is an moderately easy dinner you can prepare in about 1 hour 40 minutes. Made with whole chicken breasts, cooked, boned and cut up, cream of chicken soup (do not dilute), (16 oz.) can green chiles, diced, c. sour cream and . jack cheese, grated, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine sour cream, soup, chilies, 3/4 of the cheese, green onions, grated onion and olives.
Mix well and set aside about 1 1/2 cups of this mixture for the top.
Combine chicken with remainder of mixture.
Divide evenly on 12 tortillas.
Roll up (I fold mine into square) and place folded side down.
(I use Pam in my dish for easy clean-up.)
Spread 1 1/2 cups mixture over top. Sprinkle with remaining cheese.
Let set overnight in refrigerator.
Bake at 350Β° for 45 minutes.
Makes large amount.
