Chicken Casserole
Chicken Casserole is an moderately easy dinner. Made with 2 tbsp. cooking oil, 1 c. raw rice, 1/2 c. chopped onions, 1/4 c. chopped bell pepper and 1 1/2 c. cooked, chopped and deboned chicken, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Lightly brown rice in oil.
Add onions and bell pepper.
Cook 1 minute longer, being careful not to brown rice too much.
Add chicken and broth; bring to a boil and cook until most of liquid is absorbed.
Lower heat; cover and cook until rice is tender. Arrange cheese on top of rice.
Cover and allow cheese to melt. Serves 4.
