Chicken Cantalone
Chicken Cantalone is an easy dinner. Made with 4 halves chicken breasts, skinned, boned and flattened between 2 pieces of wax paper, 8 oz. mozzarella cheese, 3 ripe tomatoes, sliced, 1 c. mushrooms and 1 bunch scallions, cut into 1/2-inch pieces, this recipe delivers authentic, satisfying flavors. On each piece of chicken, spread pepper, Italian seasoning and Dijon mustard.
Top each piece of chicken with a slice of cheese; roll up, secure with toothpick and then flour.
Saute in olive oil or butter over medium heat.
