Chicken Cacciatore
Chicken Cacciatore is an impressive dinner. Made with 2 lb. chicken breasts and thighs, 2 diced onions, 1 diced bell pepper, 2 diced pods garlic and 3/4 c. parsley, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Salt, pepper and thyme the chicken pieces.
Sear in a mixture 3 parts olive oil to 1 part vegetable oil.
Remove chicken and set aside.
Remove all but 2 tablespoons oil.
Add diced onions, bell pepper and garlic.
Saute until onions are clear.
Add chicken and cover with tomato sauce.
Add mushrooms, bay leaves, parsley, 1 teaspoon basil and 1 teaspoon thyme.
Cook for about 30 minutes while moderately boiling, until chicken is done.
Serve over cooked pasta.
