Chicken and Rice Bake
Chicken And Rice Bake is an moderately easy dinner. Made with 3 boneless, skinless chicken breasts, 1 small onion, 1 c. rice (uncle ben's converted, not minute), 2 c. water and 2 c. shredded cheddar cheese, this recipe delivers authentic, satisfying flavors. Cut chicken into bite size pieces.
Cut onion into slices, then each slice out in quarters.
Saute chicken in a little oil.
When slightly browned, place in greased casserole dish.
Saute onions in a pan until limp and put in casserole with chicken.
Add rice, soup, water and half of the cheese.
Place uncovered in oven set at 350Β°.
Stir every 20 minutes for 1 hour, then stir again and place second cup of cheese on top.
Bake 20 more minutes or until top cheese is melted and bubbly.
