Chicken A La Tomato is an moderately easy dinner. Made with 1 onion (small), chopped, 5 to 6 pieces chicken (legs or other), 2 tbsp. olive oil, 2 tomatoes or 1 small can whole tomatoes, chopped and 1 clove garlic, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Pour olive oil in pan and heat.
Add garlic and onion and saute.
Add chicken and cook thoroughly (you can cover and let cook, just check it so it won't burn).
When the chicken is almost cooked, add the tomatoes, this makes the sauce.
Keep covered and simmer.
Serve over rice.
