Cherry Date Cookies
Cherry Date Cookies is an moderately easy dinner. Made with 1 c. butter, 1 c. packed brown sugar, 8 oz. chopped dates, 1 egg and 1 tbsp. vanilla, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In a large 10-inch pan, melt butter; stir in sugar and dates. Remove from heat and add egg; beat and return to heat and continue cooking over a medium heat and stirring constantly, until mixture starts to boil.
Remove from heat and add remaining ingredients except the 2 1/2 cups of coconut.
Stir well and let stand about 20 minutes.
You may cool in refrigerator.
Roll into balls and roll in coconut.
Great for the holidays.
May be frozen and used at a later date.
Makes 4 to 5 dozen.
