Cheesy Vegetable Macaroni is an moderately easy dinner. Made with 2 tbsp. vegetable oil, 2 medium zucchini, sliced, 2 medium cloves garlic, minced, 3 1/2 c. prego extra chunky mushroom and diced onion spaghetti sauce and 1/4 c. grated parmesan cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In a 10-inch skillet over medium heat, in hot oil, cook zucchini with garlic until tender-crisp, stirring occasionally. Stir in spaghetti sauce and Parmesan cheese.
Reduce heat to low. Cover; simmer 10 minutes, stirring occasionally.
Toss with hot macaroni.
Sprinkle with Mozzarella cheese.
Serve with additional Parmesan cheese, if desired.
