Cheesy Chicken Primavera
Cheesy Chicken Primavera is an moderately easy dinner. Made with 1 c. cubed cooked chicken, 2 c. broccoli flowerets, 1 c. carrot slices, 1/4 c. margarine and 2 c. summer squash slices, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In large skillet stir-fry broccoli and carrots in margarine for 3 minutes.
Add squash and asparagus; stir-fry until crisp-tender.
Reduce heat to medium.
Add Velveeta cheese, half and half and oregano.
Stir until cheese is melted.
Add cooked chicken cubes, pepperoni, macaroni and Parmesan.
Stir lightly and serve.
Makes 6 servings.
