Cheesy Bean Dip

Made with 1 (16 oz.) can pinto beans, drained, 1 small tomato, peeled, seeded and chopped, 3 scallions, finely chopped, 1 c. shredded sharp cheddar cheese and 2 tbsp. chili powder, this recipe delivers authentic, satisfying flavors. In blender, purΓ©e beans and tomato until smooth. Transfer to a medium saucepan or chafing dish. Add scallions, cheese and chili powder. Cook over low heat, stirring, until cheese is melted and dip is heated through, 6 to 8 minutes.
