Cheesecake Tart
Cheesecake Tart is an moderately easy dinner. Made with 4 oz. oatmeal cookies (six to eight 3-inch cookies), 2 tbsp. melted butter or margarine, 2 c. part skim ricotta or low-fat cottage cheese, 2 egg whites and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Lightly grease a 9-inch tart pan.
In blender, process cookies and butter until crumbly.
Press in pan, then refrigerate.
Blend cheese, eggs, vanilla, almond extract and honey in blender.
Spoon filling into tart shell.
Bake until firm, 30 minutes, at 350Β°. Garnish with fruit before serving.
