Makes 1 gallon.
Bring first 3 ingredients to a boil in 6 cups water.
Saute onion in butter.
Make roux of flour and sauteed onion.
Slowly add chicken broth to roux.
Cook slowly, add milk, whipping cream, beer and boiled water with vegetables.
Next, add cheese.
Simmer until cheese melts.
