Cheese Soup
Cheese Soup is an moderately easy dinner. Made with 2 medium carrots, 2 stalks celery, 1 c. boiling water, 1/2 small onion and 3 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Chop carrots and celery; cook in boiling water 10 minutes or until tender.
Chop onion and cook in butter until tender.
Stir in flour.
Add milk slowly, stirring until smooth.
Cook and stir until thickened.
Add cheese, vegetables and cooking liquid.
Stir over low heat until cheese melts.
Yields 6 servings.
