Cheese Broccoli Casserole
Cheese Broccoli Casserole is an moderately easy dinner. Made with 1/2 lb. fresh broccoli, cut into spears, 1 c. quick cooking rice, 1 tbsp. minced dried onion, 2 beaten eggs and 1/2 c. ricotta cheese, this recipe delivers authentic, satisfying flavors. Cook broccoli in salted water for about 15 minutes or until tender.
Prepare rice with dried onion according to rice package. Combine cooked rice, eggs, Ricotta cheese, pimento and 1/2 teaspoon salt.
Stir in milk.
Turn mixture into a 10-inch pie plate.
Arrange broccoli atop.
Sprinkle with cheese in center. Bake for 20 minutes or until almost set. Bake at 350Β°.
