Cheddar Rice Patties

Slice center cuts of eggplant into 1-inch thick slices.
Fry in oil until partially clear. Drain on paper towels.
Place cuts into a 9 x 13-inch buttered casserole dish. Top each slice with Mozzarella cheese and 1/4 cup highly seasoned spaghetti sauce. Bake at 350Β° for 20 to 25 minutes on lower rack.
