Cheddar Puff
Cheddar Puff is an moderately easy dinner. Made with 10 eggs, 1/2 c. flour, 1 tsp. baking powder, 1/2 tsp. salt (optional) and 1 pt. creamed small curd cottage cheese, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Butter well a 9 x 13-inch baking dish and heat oven to 350°. In bowl of electric mixer beat eggs until light.
Add flour, baking powder, salt, cottage cheese, shredded cheese and melted butter; beat until well blended.
Stir in diced ham.
Pour into casserole and bake at 350° for 35 minutes or until top is golden and center is set.
Minced or diced mushrooms or diced shrimp may replace ham. May be assembled and baked later.
Reheats well covered.
May cut into small squares for hors d'oeuvres.
Serves 12 to 16 as main course for brunch.
