Champ's Chicken
Champ'S Chicken is an moderately easy dinner. Made with 2 chicken breasts, steamed or baked and diced, 3 whole eggs, 2 c. vegetables of choice, chopped, 6 medium mushrooms, diced and 1/4 c. onions, diced, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Stew the vegetables, mushrooms and onions in a small amount of water.
Mix the chicken and eggs together.
Drain the vegetable mixture from the water and add to the chicken and eggs.
Stir mixture in a nonstick frying pan (Pam spray works well).
Add cheese; blend well.
Serve over rice.
Makes 2 servings.
