Celebration Spaghetti
Celebration Spaghetti is an impressive dinner. Made with 1 tbsp. olive oil, 2 medium zucchini, sliced, 1 c. pitted ripe olives, sliced, 1 (28 oz.) can tomatoes, chopped and 2 (6 oz.) cans tomato paste, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
In a large skillet, heat oil.
Saute zucchini, mushrooms and olives.
Add tomatoes, tomato paste, Parmesan cheese, salt, basil and pepper.
Simmer 15 minutes.
Prepare spaghetti.
Drain.
Toss with softened butter.
Arrange on warm platter.
Pour on sauce and top with grated Parmesan cheese.
Makes 8 to 10 servings.
