Cathedral Cookies
Cathedral Cookies is an easy dinner. Made with 10 or 12 oz. chocolate bits, 3 tbsp. butter, 1 egg, 3 c. miniature colored marshmallows and coconut (optional), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Melt the first 2 ingredients in top of double boiler; cool a little and add a beaten egg.
Measure 3 good cups of colored miniature marshmallows in bowl (if large is all that you can get, cut them and mix with chocolate mixture).
Spread coconut over waxed paper; spread mixture over it and roll.
Then I put foil firm around that and press firm.
Chill quite awhile and cut.
