Carrots Provencal is an easy dinner. Made with 2 tbsp. olive oil, 2 lb. carrots, peeled and sliced diagonally into 2-inch pieces, 1 head garlic, cloves peeled and halved, salt to taste and 1 can black olives, cut in half, this recipe delivers authentic, satisfying flavors. In large skillet, heat oil over moderately high heat.
When the oil is hot, add carrots, stir to coat carrots with oil and reduce to moderate heat.
