Carrot Stuffing Casserole
Carrot Stuffing Casserole is an moderately easy dinner. Made with 4 c. carrot slices, 1 medium onion, chopped, 1 can cream of mushroom soup, 1/2 c. grated cheddar cheese and 1 1/2 c. herb flavored stuffing mix (i.e. pepperidge farm), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cook carrots until tender; drain.
Saute onion in 3 tablespoons margarine until soft.
Stir in soup, salt, pepper, cheese and carrots.
Spoon into a 2-quart greased casserole dish. Toss bread stuffing mix with 1/2 cup melted butter.
Spoon on top of carrot mixture.
Bake at 350Β° for 20 minutes.
