Carrot Salad
Carrot Salad is an moderately easy dinner. Made with 1 (8 1/4 oz.) can crushed pineapple, 1 1/2 c. shredded carrots, 1/2 c. flaked coconut (optional), 1/4 c. chopped pecans (optional) and 1 tbsp. sugar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Drain pineapple, reserve 1/4 cup juice.
Combine pineapple, carrots, coconut, nuts and sugar.
Mix well.
Combine mayonnaise and reserved juice; beat well with a whisk until smooth.
Pour over carrot mixture, mix well and chill.
