Carrot Pineapple Salad
Carrot Pineapple Salad is an moderately easy dinner. Made with 3 large or 4 medium carrots, 1 (20 oz.) can crushed pineapple, 1 qt. ginger ale, 2 (3 oz.) boxes lemon jello and about 1/2 c. miracle whip type salad dressing, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Grate or shred the carrots.
Drain the pineapple.
Boil ginger ale. Pour over lemon jello.
Add carrots and pineapple. Refrigerate until firm.
Serve on lettuce.
May be topped with Miracle Whip/pineapple dressing.
Make the day before if desired.
