Carrot Layer Cake
Carrot Layer Cake is an moderately easy dinner. Made with 4 eggs, 1 c. vegetable oil, 1 1/2 c. honey, 3 c. flour and 2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beat eggs and oil together until well blended.
Add honey in a fine stream, beating constantly.
Sift dry ingredients together. Add to batter in 2 additions, beating well after each addition. Fold in carrots and add pecans.
Pour into 2 greased and floured layer pans.
Bake at 325Β° for 45 to 50 minutes, until cake tests done with toothpick.
Cool on wire racks, then frost.
