Carrot Cookies
Carrot Cookies is an moderately easy dinner. Made with 1/2 c. boiling water, 1/2 c. raisins, 3/4 to 1 c. brown sugar, 1/2 c. shortening and 1 egg, unbeaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Pour boiling water over raisins and soak 5 minutes; drain. Combine sugar, shortening, egg and lemon extract in mixing bowl; beat well.
Stir in carrots and drained raisins.
Sift together flour, baking powder and salt; add to first mixture and blend well. Drop by teaspoonfuls onto greased baking sheet.
Bake at 375Β° for 10 to 12 minutes.
Makes 3 dozen.
