Carrot Casserole is an easy dinner. Made with 4 c. carrots, 1 small chopped onion, 1/2 stick butter or margarine and 1 c. velveeta cheese, cubed, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Boil sliced carrots 5 minutes in small amount of water.
Also cook chopped onion with the carrots.
Place in casserole dish with 1/2 stick butter and cubed Velveeta.
Put a few crushed potato chips on top.
Bake 1/2 hour at 350Β°.
