Carrot Casserole is an easy dinner. Made with 1 lb. carrots, sliced, cooked and drained, 15 ritz crackers, 1/2 stick oleo and 3 tbsp. oleo and 4 to 6 oz. velveeta cheese, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Melt oleo and cheese and pour over cooked carrots.
Crush crackers and mix with 3 tablespoons of melted oleo.
Put on top of carrots and cheese.
