Carrot Casserole is an easy dinner. Made with 4 c. sliced carrots, 1 small onion, 1/2 stick butter, 1 c. colby cheese, cubed and potato chips, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Peel and slice carrots.
Boil 6 to 7 minutes.
Put in casserole dish.
Sprinkle with 1 small onion (chopped).
Pour 1/2 stick butter over and mix.
Sprinkle with Colby cheese.
Top with crushed potato chips.
Bake at 350° for 45 minutes.
If not ready to eat, cover with foil and keep at 200°.
Serves 8.
