Carrot Casserole
Carrot Casserole is an easy dinner. Made with 3 lb. carrots, about 38 ritz crackers, 1 1/2 sticks butter, 1 c. (8 oz.) velveeta cheese and 1 c. water, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Peel and chop carrots.
Add water and cook in microwave 30 minutes.
Drain and set aside.
Melt 1/2 stick butter and Velveeta until melted.
Pour over carrots.
Melt 1 stick butter; set aside. Crush crackers and mix with butter.
Pat over carrots, like a crust.
Bake at 350Β° uncovered for 10 minutes.
