Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 1 1/2 c. oil, 2 c. sugar, 4 eggs, 2 c. flour and 2 tsp. soda, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Combine sugar and oil.
Add eggs.
Sift flour, soda, salt and cinnamon together.
Add to sugar mixture; beat well.
Add vanilla and grated carrots.
Bake in three 8-inch layer cake pans which have been well-greased.
(It is very easy to serve when baked in a 9 x 13-inch pan instead.)
Bake at 325Β° for 45 minutes.
When cool, ice with cream cheese icing.
Yields 3 layers.
Makes 15 servings.
