Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 2 c. sugar, 1 1/2 c. corn oil or wesson oil, 4 eggs, 2 c. self-rising flour and 1 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Sift flour, sugar and cinnamon into large mixing bowl.
Add vanilla and oil, then one egg at a time.
With electric mixer, beat until smooth.
Fold in nuts and bake in ungreased tube cake pan at 350Β° for about 1 1/2 hours.
Leave in pan until cool.
This cake can be used with or without being iced.
