Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 2 c. sugar, 1 1/2 c. salad oil, 2 c. grated raw carrots (unpacked), 4 eggs, unbeaten and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Sift flour once; measure.
Add baking powder, soda, salt and cinnamon; sift together twice.
Combine sugar and oil in a mixing bowl.
Beat thoroughly.
Add carrots; blend well.
Add eggs one at a time and beat well after each addition.
Add vanilla; then add dry ingredients gradually.
Blend well.
Add nuts.
Pour into a 10-inch greased tube pan or a 9 x 13 x 2-inch pan.
Bake 1 hour and 15 minutes in a 350Β° oven.
Cool and frost.
