Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 2 c. sugar, 1 1/2 c. oil, 4 eggs, 2 c. flour and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine sugar and oil; add eggs.
Sift flour and other dry ingredients.
Add to sugar and oil; beat well.
Add vanilla, grated carrots, nuts and raisins.
Bake in an oblong pan or three 8-inch layer cake pans which have been well-greased.
Bake at 325Β° for 45 minutes.
When cool, ice with Cream Cheese Icing.
