Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 4 large eggs, 2 c. sugar, 1 c. vegetable oil, 1 tsp. vanilla and 2 c. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In large bowl, beat eggs, sugar, oil and vanilla until combined.
Add dry ingredients.
Stir until smooth.
Pour in nuts. Gently fold in carrots.
Bake in a 350Β° oven for 30 to 35 minutes. Don't overbake.
Cool in pans on racks 5 minutes.
Remove from pans.
Cool completely, then frost with Cream Cheese Frosting.
