Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 3 c. flour, 2 tsp. baking powder, 1 tsp. salt, 1 1/2 tsp. cinnamon and 1 1/2 tbsp. nutmeg, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Sift together first 5 ingredients; set aside.
Cream sugar and oil together.
Add vanilla and egg yolks, one at a time, mixing well after each one.
Mix thoroughly.
Add the dry ingredients to oil mixture and mix thoroughly.
Add carrots, pineapple and nuts.
Fold in stiffly beaten egg whites.
Bake in 350Β° oven for 80 minutes.
When cool, top with Buttermilk Icing.
Great family favorite for the holidays.
