Carrot Cake
Carrot Cake is an impressive dinner. Made with 1 c. raisins, boiling water, 2 1/3 c. flour, 1 tsp. cinnamon and 1/2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cover raisins with boiling water, let stand 5 minutes.
Drain. Combine flour, baking powder, cinnamon, baking soda and salt.
In large bowl beat sugar, shortening and eggs until fluffy.
Add flour mixture and milk.
Beat 2 minutes.
Stir in carrots, raisins and nuts.
Spread in greased and floured 13 x 9-inch pan.
Bake 35 minutes at 350Β°.
Frost.
Store in refrigerator.
