Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 3 c. shredded carrot, 1 c. light oil, 2 c. flour, 2 c. sugar and 1 tsp. each baking soda, baking powder and salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix together carrot, oil and eggs; add sugar.
Mix very well with electric mixer.
In separate bowl mix all dry ingredients, then add slowly to first mixture.
Use 2 (8 inch) round pans, a 9 x 13-inch pan or 2 large bread loaf pans.
Pour into greased pans and bake at 325Β° for one hour.
