Carrot Bread
Carrot Bread is an moderately easy dinner. Made with 2 c. sugar, 3 eggs, 1 c. plus 2 tbsp. salad oil, 3 c. flour and 1 tsp. soda, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix together the sugar and eggs.
Then blend well along with the or sift (sift, what's that?) dry ingredients together
(flour, cinnamon).
Add dry ingredients oil mixture.
Then add vanilla, pineapple (do not drain) and carrots.
Combine all these ingredients and mix well. Pour into greased and floured bread pans.
Bake at 325Β° for 50 to 53 minutes. Makes 3 layers.
