Caribbean Fudge Pie
Caribbean Fudge Pie is an moderately easy dinner. Made with 1/4 c. butter or margarine, softened, 3/4 c. brown sugar, packed, 3 eggs, 1 pkg. (8 sq.) semi-sweet chocolate, melted and 2 tsp. instant coffee, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Heat oven to 375Β°.
Beat margarine and sugar in a large bowl until fluffy. Add eggs, one at a time, beating well after each addition. Add chocolate, coffee and rum extract.
Mix well. Stir in flour and chopped nuts.
Pour into pie shell. Decorate top of pie with walnut halves.
Bake in lower third of oven for 25 minutes. Cool on wire rack.
Refrigerate at least 1 hour.
