Caramel Popcorn
Caramel Popcorn is an moderately easy dinner. Made with 1 stick margarine, 2 c. brown sugar, 1 c. dark karo syrup, 1 tsp. salt and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Bring margarine, sugar, syrup and salt to a boil and cook to 240°.
If you don't have a candy thermometer, boil a minute or two.
Add soda and vanilla and stir well.
Pour over corn.
Stir well.
Bake at 250° for 1 hour in roaster pan greased well with butter, uncovered.
Stir every 15 minutes.
Lay out on cooling board.
When cool, break up in small pieces and store in airtight container.
