Caramel Corn
Caramel Corn is an moderately easy dinner. Made with 6 c. popped popcorn, 1/2 c. slivered almonds, toasted (if desired), 3/4 c. firmly packed brown sugar, 1/2 c. butter or margarine and 2 tbsp. light corn syrup, this recipe delivers authentic, satisfying flavors. Combine popcorn and almonds in large microwaveable bowl.
In 4-cup microwaveable measuring cup, combine brown sugar, margarine, corn syrup and salt.
Microwave on High for 2 minutes.
Stir. Microwave on High for 2 to 3 minutes or until mixture comes to a rolling boil.
Stir in baking soda; pour over popcorn and almonds. Mix well.
Microwave on High for 2 minutes.
Spread on foil or waxed paper to cool.
Makes 6 cups.
