Candy Cane Cookies

Heat oven to 375Β°.
In large bowl, combine sugar, margarine, egg yolk and peppermint extract.
Beat at medium speed, until mixture is light and fluffy (2 to 3 minutes).
Continue beating, gradually adding flour and cocoa, until well mixed, 2 to 3 minutes.
Shape dough into candy canes; place on ungreased cookie sheet.
Bake for about 7 minutes, or until set.
Cool completely. Decorate with Peppermint Icing.
