Campfire Goulash
Campfire Goulash is an moderately easy dinner. Made with 1 lb. sweet sausage, sliced 1/2-inch, 1 large onion, sliced, 5 1/2 oz. au gratin potatoes, 2 c. water and 16 oz. can tomatoes, undrained, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In a large saucepan or Dutch oven, saute sausage until lightly browned on both sides.
Add onion and saute until transparent. Add potatoes and sauce mix. Gradually stir in water.
Bring to a boil and cover. Simmer for 15 minutes, stirring often.
Add tomatoes and green pepper. Mix well.
Cover and simmer for 10 minutes longer.
Yields 6 servings.
