Calypso Pie
Calypso Pie is an moderately easy dinner. Made with 22 oreo cookies, crushed, 1/3 c. melted butter, 1/2 gal. softened ice cream, 1/2 tsp. instant coffee and 1 tsp. boiling water, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Mix cookies with melted butter and put in a 9 x 13 x 2-inch pan.
Mix coffee with boiling water and stir into ice cream. Spread over cookies and refreeze.
