Cajun Quiche
Cajun Quiche is an moderately easy dinner. Made with 10-inch deep dish pie shell, 1 c. swiss cheese, grated, 1/2 lb. cooked, peeled shrimp or crawfish, slightly chopped, 1 small can crabmeat, drained and 2 green onions, finely chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Sprinkle cheese evenly over unbaked pie shell.
Add chopped shrimp and crabmeat.
Then add green onions.
Mix eggs, whipping cream, salt and pepper.
Pour over shrimp.
Preheat oven to 400Β°. Place pie on cookie sheet and bake 40 minutes.
Let stand a few minutes if not completely "set" in center.
