Cajun Duck
Cajun Duck is an moderately easy dinner. Made with 3 ducks, 3 c. rice, 1 bell pepper, chopped, 1 large onion, chopped and 1 1/2 stalks celery, chopped, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Boil ducks with no seasoning.
Save broth; strip meat off bones and put aside.
Cook rice in broth, adding water as needed. Cook separately bell pepper, onion and celery; simmer until tender.
In large pan, cook tomatoes, Ro-Tel and picante sauce. Add cinnamon, sage, marjoram and salt and pepper to taste.
Mix all cooked ingredients.
Simmer on stove for 2 hours, uncovered. Serves approximately 15.
