Cafe-Rice Pudding
Cafe-Rice Pudding is an moderately easy dinner. Made with 1/2 c. rice, 2 c. brewed coffee, 3 tbsp. butter, 3 beaten eggs and 1/2 c. dark corn syrup, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook rice, coffee and butter in a double boiler for about 25 minutes.
Combine all ingredients, except cinnamon; pour into a 1 1/2-quart casserole dish.
Sprinkle with cinnamon.
Set casserole in pan of warm water.
Bake at 350Β° for about 1 hour.
Turn off heat; let stand in oven for 30 minutes.
Serve warm with whipped cream.
