Cabbage-Fruit Salad
Cabbage-Fruit Salad is an moderately easy dinner. Made with 2 (3 oz.) or 1 (6 oz.) lime gelatin, 1 c. boiling water, 1 (8 oz.) can crushed pineapple, drained, cold water and 1/2 c. chopped apple, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Dissolve gelatin in boiling water.
Drain pineapple, reserving juice.
Add enough water to juice to make 1 1/2 cup liquid.
Stir into dissolved gelatin.
Chill until thickened.
Measure 1 1/2 cups thickened gelatin into a separate bowl.
Stir in pineapple and apples.
Pour into 6-cup mold.
Chill until set.
Combine mayonnaise and cabbage with remaining gelatin.
Pour into mold over the set gelatin.
Chill until firm.
Unmold and garnish as desired.
Makes 6 to 8 servings.
