Cabbage Bean Soup
Cabbage Bean Soup is an moderately easy dinner. Made with 1 lb. ground chuck, 1 lb. smoked sausage, sliced, 1 large onion, chopped, 1 small bell pepper, chopped and 2 (16 oz.) cans kidney beans, undrained, this recipe delivers authentic, satisfying flavors. In a 5 quart pot, brown beef, sausage, onion and bell pepper. Drain if necessary.
Add about 4 cups of water, beans, potatoes and seasonings.
Bring to a boil.
Reduce to low and simmer 30 to 35 minutes.
Add cabbage and continue to cook until potatoes are tender and cabbage is done.
Yields 8 to 10 servings.
